I run a 17 pitch 4 blade revolution 4 prop. I did try a 19 pitch 3 blade on the boat though before choosing a 4 blade, she still had a rediculously quick hole shot. A 4 blade prop will help alot with the handling characteristic's ie: the cornering or lack of. The slow to get on plane could be extra weight from wet foam and the fuel tank being under the console. Simply put the weight (COG) is further back. Getting the balance right in these boats is the key when doing the rebuild.
Your right about the learning curve to drive a flatback. the closest thing I can describe it to is driving a airboat lol. Even with a extended keel I added during the rebuild anything over 40mph can get hairy during flat calm conditions. When making turns just slow down, when its slick calm you can sometimes feel the boat hop from one side of the hull to the other. This is basically because there is so much boat making contact with the water when on plane. Can't wait to see the rebuild
