Carl,
The key is, just as it was when we were kids, is to get out and fish as often as you can.  You don't have to bring the boat, just get out on a pier, or a seawall, or a jetty, with a couple dozen regular shrimp, you'll catch fish.  Maybe not what you want, but you'll catch fish.  And you'll get to know the different species.  Way better than learning from a book.

In your area, there are many spots where you can wade fish.  Can't get any closer, or stealthier than that.  And, if you can throw a net and get a couple dozen greenbacks, it's free.  Can't beat that with a stick!

Carl,
You see that pretty little girl Aaron posted?  That red, as far as table fare goes, is about as good as it gets.  Firm white meat, delicate in flavor (the hell with blackened redfish!), and he caught it on the hoof.  Just trail a Frabill behind you with some shrimp or one of their favorites, some fiddler crabs...

Wait 'til you try snook!!

Scott, not that I going to say I never kept an undersized (22" a few years ago) snook, but if I decided to keep it, in the cooler it went, the days fishing was over, and the carcass became azalea fertilizer...

Scott, I can tell you this, going back to my heavy fishing days in the mid 90s, an undersized snook was a fish you did NOT want to be caught in possession of...

Still is, different fish but back in 2001 my buddy John from Australia had a 1" under sized Red and got caught, he has an American wife and kids and they deported him, so they all moved to Australia, wasn't allowed back for 10 years, they just came back last year.

DAMN!!!

Not to say it's the same thing, but back in the 90s one of our inspectors went for bugs down in the keys.  Busted with 18 undersized on his boat (not too bright a boy).  $500 a pop for each bug, plus his boat, trailer, and truck...

Go north, young man. Invite them to the fish fry, supply the cool ones,  find them a date....all is well.
