Yea, because if you cook them with the skin on, they taste like soap.

I've called them all of the about - learned of the "soap" by an ol-timer .  Without the skin it is a wonderful fish - virtually no fishy taste, goes well with everything.

Cut into 1" cubes, dipped in beer batter, into the deep fryer...

OR, a decent sized sandwich fillet (actually a steak), with a cornmeal breading, served like a grouper sandwich...but better!!! :cheers:  :cheers:  :cheers:
