Texas Grits

This is a request from Gone Fission as he actually got to try them at the reunion.


Texas Grits
2 cups quick grits
1 can black beans – drained
1 package kielbasa sausage
2 cups grated sharp cheddar cheese
2 cups grated Mexican cheese
1 small cream cheese
1 small jar of salsa
½ stick butter
Salt, black pepper & cayenne pepper to taste

In a large pot bring 8 cups water to a boil.  Add grits and let simmer on low for 10 minutes.
Dice sausage and fry in a skillet until starts to brown.  Add black beans and let cook down about 5 minutes.
Add sausage and beans to the pot of grits as well as all the remaining ingredients and simmer until cheese melts.

This is a great dish!  Makes a nice breakfast - almost like a casserole.  Bridget made up a batch on Saturday morning and they were just right.  Scott even woke up when he smelled them cooking and chowed down.  On a taste scale of 0-10, I give them about a 12.  Just don't try to do a calorie count...

Those grits were the deal, we pigged out on those bad boys first thing like it was our job!

You guys in FL at your reunion...although she can't be there...print the recipe, fix it up...we'll all be there in spirit. Awesome start to your fishing day :thumright:
