The next step is stabilizing and letting it clear for about 3 months, then I can bottle it.

If you don't drink it up before then.  ;)

The wine is starting to clear. When you take a pic with the flash or with the room lights on it has a purple cast to it in the glass carboy.

But when you take a flashlight and put it behind it the true color comes out.
Kind of like a really neat lava lamp.

But the best is when you flip the lights out.

Okay, so the 3 months were up and I finally got around to putting this stuff in the bottles. You know for a first try it really isn't bad! It needs to age for another 6 to 12 months before it mellows a little (the alcohol is very fresh and potent, warms you all the way to your stomach). Out of the 5 gal batch I got 25 bottles. Our friends have been saving bottles for us for a few months and they aren't all the same color or shape but I don't really care! When you make wine you let it ferment to "dry" (all the sugar is used up by the yeast), then before you bottle you sweeten it back to your taste. I don't really like your normal muscadine wine from the store as it is too sweet and is more of a dessert wine. So I sweetened it a little, just enough to bring out the flavor. What it ended up like is like a pino grigio but bright red. It is also about 14.5 % alcohol

I have been thinking about a label for the bottles for a few months and decided that the label should have a picture of a small waterfall that is just down the hill from the vines. The creek that flows over it is called Hammock creek. I got a picture from our neighbor of the waterfall that he took back in early spring when it had a lot of water going over it. I took some pics a couple of weeks ago when everything is green but there isn't much water right now. Since I  really don't know anything about Photoshop or any of those other programs I made a call to our buddy Skoot. One of my better decisions! Scott is a graphic artist and is absolutely amazing on the computer! If anybody needs anything done he is definitely the person to call!
Anyway here are some pics of the process and finished product. Thanks Skoot! They do look amazing man!

Mixing the sugar in.

bottles ready to fill

all of them filled

corking them

Finished product with the labels and covers on

Ya gotta love the color it turned out!

The waterfall in summer

Of coarse they need to sit a while and will get better with time but If you attend the gathering in the Carolinas I will have some there so you can tell me what you think!

Lewis,
With that label, you need to throw in Napa Valley, and you could make a fortune!  Glasses up, gentleman, it's Friday afternoon!!!

Gran, you tell Caroline that if she will buy the kit I will make it and she can have half of the batch. That should equal about 15 bottles.

Seems like it is pretty easy - I see the kits that even have the juice already - even I could do this (since I don't have any grapes - and I saw I could even buy those on that site) :!:
