'Mater Sammiches

This is a old family favorite and tastes like pure summer:
Here's what you need:
Duke's Mayonaisse - sorry, but no Kraft Miracle Whup - Duke's is the real deal  :thumright:
Salt
Coarse Ground Black Pepper
Fresh white bread - soft and yummy - sorry again, but ya can't use whole wheat  :salut:
Fresh, ripe, big 'ol red tomatoes from your vine or a friend's garden  :santa:

Assembly Instructions:  :scratch:
- Wash the 'maters and cut the little hard cone out where the stem was
- Cut the tomatoes side to side about half an inch thick, not horiziontally - as mom used to say - "east to west is best."  Discard or just eat the end pieces with the skin on them to make a better sammich.  
- Coat one side of both pieces of the bread with Duke's, then sprinkle the mayo with the pepper for a nice, even pattern.
- Arrange the 'mater slices on the bread and sprinkle some salt on the top of the maters.  
- Put the top slice of bread on - you can cut it if you want, but I have better luck with the whole sammich (see "eating," below)

Eatin' Directions:   :tongue:
- Hold the sammich carefully with both hands and make sure you are wearing short sleeves
- Stand over the kitchen sink
- Take a big 'ol bite of goodness!  You can expect drippage from the ripe 'maters - that's why you're over the sink!  
- Try to keep the 'maters inside the bread, but sometimes they want to slip out due to the Duke's bread lube

Ain't nuthin' like it on a summer day!  I will post some pics when I can get some good 'maters -still a little early here...  :(

Yes that sounds like "pure summer"!  You can always add the bacon and lettuce for a variation (gosh, wonder if anybody has ever tried that?), but when it comes to mayo, Maggie and I are a Hellman's household...

We used to eat mangos standing over a sink...with NO shirt on!  Juice runs down your chin, you know...

Absolutely the perfect recipe Cap'n John 'cept my wife doesn't allow anything but Hellman's in the house.  I don't guess I have ever had Duke's.  
I have two fat 'maters chilling in the fridge for my afternoon snack as soon as the wife gets back with some fresh bread.  ;)

Commercial mayonnaise sold in jars originated in New York City, in Manhattan's Upper West Side. In 1905, the first ready-made mayonnaise was sold by a family from Vetschau, Germany, at Richard Hellmann's delicatessen on Columbus Avenue, between 83rd and 84th Streets. In 1912, Mrs. Hellmann's mayonnaise was mass marketed and called Hellmann's Blue Ribbon Mayonnaise.

At about the same time that Hellmann's Mayonnaise was thriving on the East Coast of the United States, a California company, Best Foods, introduced their own mayonnaise, which turned out to be very popular in the western United States. In 1932, Best Foods bought the Hellmann's brand. By then, both mayonnaises had such commanding market shares in their own half of the country that it was decided that both brands be preserved. The company is now owned by Unilever.

In the Southeastern part of the United States, Mrs. Eugenia Duke of Greenville, South Carolina, founded the Duke Sandwich Company in 1917 to sell sandwiches to soldiers training at nearby Fort Sevier. Her homemade mayonnaise became so popular that her company began to focus exclusively on producing and selling the mayonnaise, eventually selling out to the C.F. Sauer Company of Richmond, Virginia, in 1929. Duke's Mayonnaise, still made to the original recipe, remains a popular brand of mayonnaise in the Southeast, although it is not generally available in other markets.

I love what Duke mayo fans about say about Hellmann's in the grocery bag - "Hell man, why did you buy that?"   :lol:

John,
I've had Duke's many times, very good Mayo.  Forgive me for saying this, but it leans more towards Krafts.  I like the "tart" of Hellmans...

But I will say this.  Miracle Whip should be sold in a different jar, at the other end of the condiment aisle!  That is NOT even close to mayonnaise! :thumbdown:

I thought about it but I was nasty from doing yard work and just told her to get busy cooking.  I'll get some bread tomorrow and have two sandwiches.

Something new - Duke's Light!  Half the calories and fat of regular Duke's, but howzit taste?  Got some really good maters the other day, so I thought I would put it to the test:

 

The answer - really good!  I really can't tell much difference in the Lite and regular - it might be different in something more mayo-intensive, but half the fat and calories with about the same great Duke's taste seems like a winner!   :cheers:

Don't tempt me.  I have worked very hard at eating properly the last 12 years and probably have a total cholesterol level most would not believe.  That's all I need is a new addiction ;)

I'd just bet it is really good.
