It would be a big undertaking, but doable. You would need to reengineer the forward cap cutting out the cuddy and rebuild a coaming. You're also removing the liner, so you would need to add stiffness back to the hull.
There's a rebuild of a Kencraft 215 Walkaround to a CC on The Hull Truth, but I think the Photobucket issue has messed up the pictures. You also may want to check out my 200 CCP rebuild. It's not a cuddy, but I removed the liner to go with a cap & hull construction. You can see some of the work that I'm doing to replace the stiffness lost when the liner is removed.
