1975 170 steering cable broke.

Hello

The steering cable broke on a 75 AS 170.
It has a 76 Johnson 75HP Stinger motor.

Can anyone recommend a cable length and solid manufacturer?  Will I need a kit due to age or just a cable?

Can anyone give me an idea how many typical labor hours I can expect when I have a dealer
complete the work (the dealer is considered competent and fair by word of mouth)

The dealer stated almost all cables are $190-200.

I know the floor has to be pulled. Does the helm have to be moved/disassembled?

I'm in Minnesota and he has not worked on an AS.

Here is a drawing of your boat:


Notice there is a "trough" with a cover running from the console to the aft of the boat.  In that trough will be the engine wiring harness, trim and tilt harness, control cables and the steering cable. There might be additional wires like transducer and depending on where your battery is, power wires. So you don't have to remove the floor to get to the cables, just the trough cover.
