Keep or replace mercarb 2bbl?

1984 470 with mercarb 2bbl. Been chasing issues for quite some time now if you've read any of my other posts in engine woes.  I've read these carbs have low speed/ rpm , acceleration, and high speed  vacuum actuated mechanisms. I can run at 1500 rpm all day no issues but when I full throttle I only get run time long enough to empty the float bowl. Fuel pump is new, gas is clean, points coil cap plugs wires new. Should I replace carb? Motor has extremely low hours for an 84 (150ish) and is in incredible shape, but I'm tired of getting stuck. Help please , what are my options?

I've heard of a Holley 2bbl upgrade for the 470 and 485. I would research it.

My father in law called last night , in an effort to help me out, and asked if I knew if there was a screen on the pickup in the tank.  If there is, is it possible the old varnished fuel is filling the screen and restricting fuel to the pump?  When I cleaned the tank I notice an orange haze that wasn't concerning at the time, but through talking to some of the loyal Aquasport family that the new fuel may be stripping the tank clean as I have seen a similar color jelly in the filter at the carb location.  After further review of new pump operation, pumps good for 10 seconds, enough to fill mason jar, then dribbles.  I thought this action was because the carb wasn't "asking" for fuel but being a mechanical pump should pump no matter what. Correct?  I was thinking about blowing air back into the tank from the water seperater. If this works, is there any way to break up the gunk? Or do I pump fuel out and start over.
