One I've forgotten, and Maggie's fav...flounder.  My personal fav for a fresh, fried fish sammich (on a kaiser with tartar and a leaf of lettuce), Maggie of course like the fillet sauteed in butter w garlic, lemon, and white wine.  For those in the Sarasota/Bradenton area, go to Star Fish Company in Cortez, S side of the road before you get to the bridge, they now have a "restaurant" at the back end of the processing building (have to walk through all the nets/traps/whatever to get back there) that serves fresh what they caught that morn...excellent stuff!! :thumleft:  :thumleft:

Agreed!  Flounder is definitely a crowd pleaser.  My wife's favorite all time fish dish is "shrab flounder" which is a seasoned, lightly breaded, oven-baked, rolled filet of fresh flounder stuffed with an out-of-this-world crab and shrimp stuffing.  She gets it at this riverside place in Jacksonville that I'm blanking on right now.   :scratch:

 AWESOME!!  Sounds a lot like Keys Fisheries in bayside Marathon.  :thumright:   Had hogfish nuggets there once which were amazing except that I almost broke a tooth on a stainless hog ring that had somehow found its way into one of the nuggets.   :oops:   Nothing quite like chomping down on a delectible piece of hogfish only to have your molars meet a big chunk of metal.   :pukel:

I remember catching a big ole doormat flounder while wading at Snead Island by the marina - a real beauty.  Caught a decent Snook right after that and had them both on a stringer.  That was a weird feeling having those two good size fish swimming between my legs  :shock:
You're right about the Flounder - very tasty and a weird fish to clean.

Easiest way to clean flounder is slice them right down the center, head to tail. Fillet from the center to the top. Then center to the bottom. Two clean fillets. Then turn them over, do the same thing. Four fillets total, two thick, two thin.

Nothing left but a head and skeleton :mrgreen:

Many thanks Bob! I must admit that it is hard to avoid when the place is over 200 years old and has almost always been some kind of farm...  I don't want to fix anything up because I am afraid that I will mess with the old girls soul...
