This is the cheapest source for stainless hardware I have ever found.  I was afraid it would be junk but my son and I both ordered some stuff from them and it has held up well for over 5 years.  Maybe they will have what you need.  Hinges and latches are listed under Cabinet Hardware.

I'll second that. The pins for my Bimini and my anchor chain "lock" are indeed well made.
They seem to run sales all the time and free shipping is standard (or was).
