There's a guy who restored a 71' or 72' 20' footer, brought his boat from atlanta to se fla to have a small shop do his boat from top to bottom. He details the work and the hardware used on each item, manufacturer, size, etc.
Been on too many boats that that the top rattled, shook, etc. For that reason(weight) don't go too big, and the shop needs to inspect the console and the deck. On the outside a top seems like an easy upgrade, but if done wrong(like my friend greg who hates his and complains constantly every trip), money and time spent is wasted, and worst case will damage the deck and console.
