South Carolina fish breader

Tried it tonight....produced on a Palmetto State (Charleston) rice plantation. GOOD stuff on those whole flounder Cap'n John caught.
 
Add some salt to the breader. Said it had salt in it.....so went with it naked....but needs some salt.

Soaked the fish in a whole milk/buttermilk mix....rolled it in the breader....lightly fried in peanut oil at 365 degrees F.

Served it with some Zat remoulade sauce on the side. And sweet corn.

Gotta give credit where credit is due, to our Sandlapper cousins....it's tasty!

Interesting.  I have been using corn flour instead of corn meal.  Well, I use Zatarain's some too.  Rice flour should be a new taste.  

Everyone needs to give Panko Bread Crumbs a shot as well.

All on topwater too.

Good job JJ - where I'm at in Houston, I can only see overpasses, no water ('cept from the sky   ).  I think the state monument in Texas is the overpass - never seen so many. Like 4 to 6 layers high

JJ, I'm all about a topwater bite... Its the best. Taking a guess what you'll do with them.....just "spec"-ulating here....gonna guess you'll put the two three-pounders in the freezer....and put the special JJ sauce on big mama!

Funny you mentioned the Panko Crumbs....Lewis mentioned it too, just two days ago.......he was impressed.

We really like stuff done with the Panko crumbs.

I'm not even going to freeze the others.  I did vacuum seal them but just put them in the fridge.  Fresh speck was yummy tonight.  We will do a re-run on them in a couple of days.  ;)

Rick, I try to do nothing more than change planes in Houston and I dodge that if I can.  Crazier traffic than DC.
