JJ, the Zatarain's is the deal. I like it straight out of the box, but the bride likes it toned down....so I mix hers with fine-ground corn meal (may as well be corn flour)
Good stuff. Like to soak it (fish, shrimp, scallops etc.) in buttermilk, rather than an egg-wash. The pro-fryers tell me they use nothing, just throw the seafood straight into the breader bag...
I'm too GOUR-MET for that...
