Simple Crab Cakes

Haven't put up a good recipe in a while and it's that time of the year again. This ones easy and delicious.

Simple Crab Cakes

1 Lb Lump Crabmeat
2 Whole Scallions, Minced
1 Stalk of Celery, Minced
1 TSP Fresh Parsley, Minced
1 TSP Lemon Juice (optional)  
½ Cup Bread Crumbs
1 Large Egg Beaten
¼ Cup Mayonnaise
Salt & Pepper to Taste

Preheat oven to 350. In a bowl mix crab remaining ingredients and form into patties. (4 or 5 depending on size) Lightly coat patties with additional bread crumbs and place on well buttered baking sheet. Bake 15-20 minutes until golden brown turning once.

Serve with cocktail or tartar sauce.

...or just as they are!  Excellent!!

Couple years ago, I was up in Kent Narrows, MD for Proline.  Heard about Harris Crab House...damn, their AWFUL proud of their crab cakes!!! :shock:  :shock:
