Haven't put up a good recipe in a while and it's that time of the year again. This ones easy and delicious. Simple Crab Cakes1 Lb Lump Crabmeat2 Whole Scallions, Minced1 Stalk of Celery, Minced1 TSP Fresh Parsley, Minced1 TSP Lemon Juice (optional) ½ Cup Bread Crumbs1 Large Egg Beaten¼ Cup MayonnaiseSalt & Pepper to Taste Preheat oven to 350. In a bowl mix crab remaining ingredients and form into patties. (4 or 5 depending on size) Lightly coat patties with additional bread crumbs and place on well buttered baking sheet. Bake 15-20 minutes until golden brown turning once.Serve with cocktail or tartar sauce.
