Insulate floor fish coolers on 275 Explorer

On long trips, the ice in my cockpit fish coolers melts.  Both drains are connected through a macerator and discharge through a side through-hull.  I am considering insulating the boxes so the ice will last at least a day for long trips.  Is there a good aerosol product with good adhesion that will slow the ice melt?

what about fiberglassing in some blue foam board?

That's an option, but access to the back of the fish coolers is very limited.
