The hatch for my console is pretty beat up and I'd like to get a new one if possible, anyone know of a source?

Is it plastic? Looks like it is an entire insert to fill an opening in the face of the console. Maybe you could use the insert as a mold or plug to make your own from fiberglass??

Yes that's correct, looking for the whole insert. Also yes it is plastic.

I've never worked with fiberglass or molds, really anything like that so I'd have no idea where to even start.

Unfortunately I doubt you will find a replacement.
