I would say it knows it's impending doom...first, it's flying (not intended for that fish), second, those talons hurt like hell!, and third, it's gonna be dinner...

That was some cool video... how did they know it was coming in for that flounder?  and I'm surprised the Osprey would come down for it if there was someone in the water that close to the target.. very cool.
