I used to go down to Calabash back in the 60s - they were WAY out in the middle of nowhere then!  Calabash-style seafood is lightly breaded and fried, served on a buffet or family style (big portions!), and always with hushpuppies.  The town was not even incorporated until 1973.  Calabash got popular in the 70s and 80s when I-40 went to Wilmington and Myrtle Beach started creeping north.  Now Calabash is being developed, but they still have less than 1000 people living there.

The thing about lard is, it's....well, Hell boys.......it's LARD for Pete's sake!  Have you ever called somebody a "Crisco"-ass?    

Anyhoo, Crisco shortening (the white stuff in the big blue cardboard container) is a much purer product than veg. oil...and my intent is to get the the taste from the spices and chicken...not the frying medium.  

But I don't disagree...lard works really well in pie crusts too.**

You know, down here, we eat a lot of Cuban bread...go figure.  And Cuban bread is only baked properly...using lard...
