I have only managed to get just over 32 knots out of my XF200 using a 141/2" x 19" stainless steel prop. with a full 73 gallons on fuel, another 10 gallons in cans sitting in the bow cuddy and 3 adults with all gear on board. How does that stack up in your experience?

32 knots is approx. 40 mph. plus. Not bad. Especially with the extra weight forward as you have described.
Bottom line...what does the tachometer register at wide-open throttle (WOT).
Anything around 5500 rpm...you have your answer...that's what she'll do. If its less...you may get more.

A little closer to 36.9 mph but hey......
Whose counting?
37 mph is still fairly fast, relatively speaking.
