Porgy 4 dinner tonight..

went out to the reef this weekend for a couple hrs, came home with some nice Porgy, and some big grunts.  
I made a macadamia nut crust In the food processer, lightly brushed the filets with olive oil and salt/pepper and coated with the macadamia breading and baked in the oven. served it with a coconut rice and a peach tomato salsa...  Dang!!!

That does sound good!!!  You ever fix stingray or skate?

I tried cooking the meat from the wings of a small stingray a few years ago.  It stunk up the house so bad we threw it out and called Domino's.  :puke:

Now interestingly enough, I first tried it in Bradenton.  Caught about a 2' wide one off Rod 'n Reel pier, skinned and filleted the wings, sauteed in butter...ate it right out of the pan!  Don't know what the difference was between yours and mine, but I'd do it again in a heartbeat!

Did learn that you can't take a hole punch and make "scallops" out of sting ray.  The meat was like ribbons connected with very fine cartiledge that broke apart as the meat cooked...

No, more like North Atlantic white fish, Cod, Hake, or the like.  Very mild, a bit sweet, and the butter certainly didn't hurt!  

Give it a try!  You need one of decent size, about 2' wingspan, to get a decent amount of meat off one.  Cut the wings off as close to the body as possible.  And remember, to pick one up, just grab it by the eye sockets...kinda like picking up a 6-pak...

Cool gonna have to try it,who knows,with all the restrictions on fish these days maybe stingray will be the next great table fare fish.

Was wade fishing Palma Sola Bay one time, had a whole pod of rays follow me all morning...biggest about a foot and a half, guess the kids were in tow.  Right in by my legs.  Guess they figured I'd bring THEM dinner...
