Even though she was built long before I got to AS, I feel she could handle the Yams. Your key issue will be the weight, not in the respect of settling the stern down lower, but in respect to the ability of the transom to handle the dynamic loads. I would consider bracing the splashwell corners to beef up the most obvious areas of concern, probably with 3/8" thick braces like we used to do on the Wellcraft 220 Coastal/CCF with a twin 150 option.
The hull, on the other hand, may not be able to use all the speed that a pair of 200s might be able to produce. In that case, I'd stick to props that will emphasize her holeshot, and get the top end cruise in the right RPM range. One of the upsides to having too much power is that you can use props that give you a "pin your back to the seat" holeshot, yet you know you'll see a compromise in top speed, when, in reality, because of the limitations of the hull, your not really looking for top speed...
