The wife was looking for something on the healthy side to go with dinner.  She found this recipe on the Publix website.

The Eggplant Pizzettes were absolutely freaking awful.  They were so bad they made us laugh so hard we could hardly finish dinner.  Of course, I would have never clicked on a recipe with Eggplant Pizzettes in the name.   :(

She actually made the cobbler too.  It was awesome.

Kudos to Mrs. Jones. She put forth a healthy meal, good for her. Just like the rest of us, trying something new.

Seems like those low-cal recipes on the net may as well be water and whatever. The recipes posted on the board here lately are essentially soul-food, but not too fatty.  Lotsa flavor, but low-everything, if you take a look at the ingredients.

I gotta go with the OP here. If it has eggplant in it I'll take a pass and chew on a broken bottle first. When I was a kid my mother made eggplant parm and everyone who ate it says it was the best ever. I wouldn't know. Tried it once and decided I would forgo dinner on eggplant nights

Yeah, she is really good to me though.  I have to give her a bye now and then.  She tries hard and we got such a laugh out of it it was worth it.

There you go.  Anyone that does not want their fried eggplant, I'll take it.  Not quite fried green tomatoes but it's up there.

But you know, John, you've got to eat it as soon as it's done.  Stick the leftovers in some tupperware and re-heat the next day?  I don't think so....

Nope.  Neither eggplant or tomatoes is that good leftover or cold.  I love the tomatoes so much that I have been known to put them in a skillet and warm them up.

All I can say is the wife pulled out the recipe in the top post last night and made the cobbler again.
