Best plan for me was to study what others have done, here and on Mako, and make out a sequenced task list and proceed from there. Various surprises will come up which will have to be dealt with but there are solutions for most everything.
If you have a chance, please post a few pictures of your boat so we all can get an idea of the scope of the project. I second LilRichard's suggestion of plowing through the rebuild threads. Lot's of (free) good info. can be found in them. This being apparently your first project boat, budget time so that hard deadlines don't oblige you to cut corners. If you can, arrange a place where you can work on the boat under cover and where you can duck out to when you have odd scraps of time to work on it.
Post pictures and narration of your progress and I guarantee you will get suggestions, questions and words of encouragement when the project seems to be overwhelming. Most of us have been there and have been helped out of more than one hole.
