anchor chock installation questions

I'm going to install an anchor chock on my 17.5 Osprey to to store my anchor above deck and I have a few questions for those who've already done this. When mounting the anchor chock components, did you drill thru the deck and use a bolt, washer and nut, and a backing plate, or did you just drill a pilot hole and use a standard stainless steel flathead wood screw (and sealant too) and mount it that way?

A screw will work fine on chocks, as long as you are not using a windless or something to put stress on the anchor.  Anchor chocks hold the anchor in place and don't get a lot of stress, so screws will work fine.  And yes, seal the screw holes carefully to prevent moisture intrusion!   ;-)
