For those in the Sarasota/Bradenton area, go to Star Fish Company in Cortez, S side of the road before you get to the bridge, they now have a "restaurant" at the back end of the processing building (have to walk through all the nets/traps/whatever to get back there) that serves fresh what they caught that morn...excellent stuff!!
Easiest way to clean flounder is slice them right down the center, head to tail. Fillet from the center to the top. Then center to the bottom. Two clean fillets. Then turn them over, do the same thing. Four fillets total, two thick, two thin.Nothing left but a head and skeleton
