Chicken and pastry, NEW and IMPROVED
« on: June 15, 2010, 12:31:16 PM »
Was looking at other recipes for C and P, tried this one, it was good....and easy.

Feeds 4:

Dark meat chix, trimmed from fat, legs and thighs joined, 4 pieces
Celery, 2 stalks (optional)
Bottled spring water
Frozen southern-style pastry strips (at grocer's in frozen pizza section) one box, "Mary B's" or "Annie's" brand.
Chicken bouillon cubes (1-2)
Salt and pepper

Chop the celery fine. Cut excess fat from chicken, leave skin on. Place chicken and celery in 4 quarts boiling water.   Boil 30-45 minutes max, (medium boil). Remove chicken to cool.

Render (remove)  heavy fat/grease from side of pot with big spoon. Add bouillon/water to pot. Later, break cooled chicken to strips/pieces. Set aside.

Bring pot to hard boil, add frozen pastry strips slowly, one at a time (so do not stick) and pot continues to boil. Lift pastry occasionally, stir EASY, keep strips intact. Lower heat to simmer,  now add 1/2 tsp. salt,  1 tsp. ground black pepper. Simmer six minutes...add chicken pieces back in, simmer ten minutes more. If too thin, lightly stir in 1 tsp. cornstarch to thicken. Keep liquid level at one inch, do not scald.

Remove pot from heat, lightly stir, cover.  Let stand 15 minutes. Add salt and more black pepper to taste.

Serve with fresh salad and cold cervaza.

Tweaked 2-19-11.

Stinks to bump your own topic, but in this case will do it :thumright:  Recommended to SB today that he and the missus try the C & P.  Cooked up a pot tonight, as a final test of the recipe. Forgot how good it was....and EASY. The secret is the frozen pastry strips, right there in the frozen pizza section. 18 strips, 2 dollars.

Instead of chix bouillion cubes when adding the pastry, add chicken broth instead ( backing  off the salt)

The celery has it goin' on. Chop it out very fine. That and the fresh black pepper.

Time to go redneck. Try it, you'll be happy.

JJ, guess you don't care much for celery. I can respect that.

Hurry on home and fix you up a pot, sans celery.

My bride was pleased tonight with the effort. As is found on any Chinese menu: "Happy Family".

A little celery in something is okay but if it's heavy or I bite into a crunchy piece :blech:

I do love me some black pepper though.  I have to be careful 'cause the wife can't do real spicy.

JJ,
When celery, done right in the mix, the right consistency, the flavor of the meat and broth...you don't even know it's there...

Well its cold outside. NOW is the time to serve chicken and pastry at your household. The kids eat it up, and so good for them. Use celery per your taste. This dish is great, with or without celery.

Here is the brand of Southern style pastry strips used in the recipe:

Look for it at your grocer's counter, by the frozen pizza.

You guys try it....you'll have zilch invested, and you MAY receive a kiss for fixin' dinner :thumright:

Bill, it's not pasta, it's pastry...BIG difference!  Maggie likes to do pastry triangles filled with various meats, potatoes, a little veggie thrown in...yum yum!!!  But we buy the Pepperidge Farm frozen pastry sheets...
