30” motor 25” transom aquasport 245 explorer

I have a aquasport 245 explorer. I got a crazy deal on two 300 Etec G1s. I’m looking to replace my old evinrude with one of those ETECS. Would I be able to run a jack plate or vertical plate?

You could add a jackplate.  Most have 6" vertical lift, which would be perfect for you.  You should try to stay with as little setback as you can so you don't change the COG of the boat much, even though the 245 is a bow heavy boat.
