sounds like it's comin along nicely, once all the old stringers & problem spots are out of the way should move along easier.
60 gallons sounds pretty huge for a belly tank in that boat- with the original stringer layout I had trouble finding a +/- 30 gallon tank that would fit, the original was 26 gallon under the console.  If you can avg 3 mpg I'd think 30 gallons would be plenty, but if you can work the stringers around a bigger tank nothin wrong with that.

I picked up a pretty nice deal on a Moeller thru Jamestown Distributors or Greatlakes Skipper, can't remember which now but shipping was reasonable.
Amazon has them now & then too, sometimes with free shipping!

If you've got the time, you can scroll thru all the Moeller tanks ever made, gotta click on the MOE part number to get the LxWxH though.  And remember to add a couple inches to the height for the filler neck.

I got my Moeller from Marine Connection.    72x24x7 I believe, 50 gallons.  They are NOT on the Moeller site's list (I emailed them to get an official sender depth, I think they were custom tanks?), but im pretty sure MC has a couple still there.    All the connections are near the front of the tank though...

Don't forget about Marine Surplus in Ft Meyers and Sarasota - bunches of poly tanks (and other things too  :roll: ).
