You are right, there ain't no moo in Carolina Q.

We use everything but the oink, from the Rooter to the Tooter!

Gonna do my best to give the boys here a way to cook open pit BBQ, over hickory coals, Goldsboro/Wilson style.

And Lexington style. Same technique, only difference is the sauce (Piedmont/Lex style later adds ketchup to the finishing sauce,  fomenting Carolina political debate since 1920)

They are both damn good. Fresh pork shoulders/picnics placed 20 to 24 inches above prepared hickory coals, slow-cooked at 220 to 250 degrees for 7 to 9 hours.  On your own patio grill. As the oldtimer's will tell you, it ain't about the sauce. Its about the Q.

Gonna post the recipe. Boys, tell your bride you're gonna be drunk/tied up on Q day.

They'll forget being mad when they fall in love again..... :bounce:  :bounce:

Yep, ain't no cue like down east - Wilbur Shirley's place in Goldsboro has been there since '62 and still has the biggest open pit in the business - and some of the best cue.  Wilbur gets his slaw from my brother-in-law - small world, huh?  If you stop by, make sure to ask for a tour - and check out the hogs on the grate out back.  Whole hog cue at Wilbur's - everything but the squeal.   :pig:

Another favorite of mine is Allen & Sons in Chapel Hill - he puts the pigs on the coals at 4:00 every morning so they have some cue ready for the lunch crowd.   :cheers:  

There are a couple good books about Carolina cue, Holy Smoke lists good places reviews, and has recipes and video on the web site:

Wow, neat that you know Wilburs! I can remember as a kid going there with my Dad.....and seeing the pits!

And Allen's in Chapel Hill has an awesome reputation. The book you mentioned is great reading....picked up a copy in the mountains this past summer. Neat how all of the families are kinda tied in.

In the next few days am going to do my best to post a good method for the folks here to attempt the pit method. I had a local metalsmith make a cooker for this, it has its own side "burn barrel" for burning hickory to coals, then a trap door at the bottom to slide the coals over to the cooking chamber. Works good....now I'm getting hungry myself!!

Come on over, we'll go hit Wilburs!

There is great Q all over the South.  I know a couple of places in Alabama I'll put up against anyone's.   :wink:

What else would one make Q from besides pork?  Iguanas?
