I run around 5400 rpms with 2 people and 20 gallons of fuel. The hole shot is awesome but that's due in part because of the E-Tec. My top end is 39 mph on GPS.
Propping a boat can be a science. You're going to want to make sure your RPMs are as close to 5500 as possible based on your average conditions. Considering you're going to be running a jackplate, try and find a marina or dealer that will allow you try different prop setups until you find the right one. You may pay a little more for "one" ideal prop but it might be less costly than buying 2 or 3 until you get right.
