You want the keel, chines and stern corners all supported. 2x10x12ft “bunks” under the chines conforming to the hull is where id start. Maybe put another under the keel on edge. Use the eyecrometer and some diagonal measurements and maybe pull a few criss cross intersecting strings to make sure shes true before adding structure back. You can shim with some thin plywood where needed

It usually doesnt lie!   Depends on your vision i guess...  I typically stand in front of the boat and just line up intersecting reference points starting at the top of the stem. Shim or adjust stands as needed.
